I haven't installed linux on any mac. The hardware of the new macs is very
similar to PCs (with the exception of EFI) so I would expect it not to be very hard.
After some googling I couldn't find any step by step tutorials for installing
linux on the new iMacs, but there are a bunch of how-tos for the macbook which
is essentially the same thing as imac. You can find these here:
http://tuxmobil.org/apple.html .
Linux supposedly does support EFI so using bootcamp should not be necessary.
Although I am not sure if any distros package it yet.
Keep us posted, I and probably a lot of other people would love to hear your
progress.
